Considered the highest grade of sea salt, Flor de Sal is composed of the newly formed crystals of salt that float on the surface of salt pans before falling to the bottom. We source ours from the salt lakes in the heart of the Castro Marim, a protected nature reserve located along the southern tip of Portugal known as the Algarve, where salt has been harvested since Roman times. The salt from this region continues to be highly prized for its purity and is harvested exclusively by hand by workers who use only wooden instruments and their knowledge of the salt lakes. The sun-dried sea salt has fewer impurities and a great variety of minerals and micronutrients than mechanical salt, including sodium, magnesium, potassium, iron, zinc, manganese, and iodine. The delicate Flor de Sal crumbles at a touch and melts on the tongue.
