To flavor hot or cold preparations. Can replace couverture, chocolate, or cocoa powder with improved results, particularly smoother texture and reduced bitterness. Strong agitation is necessary for complete incorporation. Hot chocolate: 40 g Couverture Atomize, 75 g dextrose, 20 g cocoa powder, 3 g cornstarch. Combine powders, and add to 400 g hot whole milk.
