The incredible Arbequina has been grown in the region of Priorat, in Catalonia, for over a thousand years. They are picked by hand the moment they turn green at the end of October, and from there they are soaked in a blend of water, salt and aromatic herbs. To ensure a perfect flavor, the olives marinate for months until they are ready to eat. Try them on a tapas plate of cheese and jamón, alongside grilled fish and chicken, or in a hearty salad.
