Holey Cow has a bright yellow paste and small, even eyes. Inspired by young cheeses of Switzerland, Holey Cow is with large eyes and a dense, fudgey paste. All of the milk for Holey Cow is single sourced from Cal-Poly's Agriculture Department, 20 miles from our dairy. We only make cheese with fresh milk on the day it arrives from the dairy. Holey Cow is made with full fat milk, it has a fudge like texture, and light flavors of fresh cut grass and butter. Pair with most anything - a favorite for all ages.
