Pecorino Toscano Tenero PDO Cheese is made from sheep's milk from pastures in the region of Tuscany or other neighboring territories falling in the regions of Umbria and Lazio, as established by the Production Regulations. It is a mild cheese. The ageing period is at least 20 days. It has a fragrant, accentuated flavour characteristic of the special production procedures.
