Willoughby Special Wash is a soft washed rind cheese made with pasteurized cow milk and aged in our underground vaults. Each cheese is washed with a salt and water brine solution in which a special beverage has been added. Adding the beverage has an effect on the microbiology of the rind and ripening of the cheese creating more complex flavors - such as freshly baked bread, ham and cured meats.
