Goat Halloumi
Aphrodite Traditional Goat milk halloumi is made in Cyprus from 100% pure goats. Hand crafted and still formed into pockets by hand, halloumi has been known as the traditional cheese of Cypriot shepherds since ancient times. Before the British introduced cows to the island in the late 19th century, Halloumi was only made from goats and ewes milk during the spring and early summer and preserved in earthenware pots in salted whey. The milk combination, size, and shape depended on the season and the region of production and when ewe's milk was in short supply farmers would make this cheese using only pure goat's milk. The natural fat in the cheese creates a crust when fried or grilled and the flaovour of the goats milk provides a firm yet elastic texture, and a subtle lingering lemony tang. Serving suggestion - split in half length wise, grill or bbq until golden brown, serve with a squeeze of lemon.
