This special line is made at a small artisanal cheese plant in Valsesia at the foot of Monte Rosa by a cheesemaker with over 30 years of experience. Milk is collected from freely grazing dairy cows north of Novara in the hills to create a blue so creamy that it’s best served with a spoon; the French refer to this style as “a la cuiller.” Brothers Maurizio and Fabio Leonardi personally select the best wheels to become Gran Riserva. Irregularly shaped patches of pale blue penicillium roqueforti mold are found throughout the soft, unctuous bone white paste. Mild taste with a sweet, decadent creaminess.
