Edam is one of Holland's most famous cheeses, second only to the ubiquitous Gouda. Edam Ball has a spherical shape and has a smooth and sweet nutty flavor. Made from Skim or Partially skim milk with a distinctive red wax coating, this cheese does not spoil, it only hardens and intensifies in flavor as it ages. This characteristic combined with it's wonderful and (approachable syn?) flavor made it a favorite with travelers and the world's most popular cheese from the 14 throught the 18th centuries!
