Beemster Swiss is an alpine style cheese made in Holland by the Beemster master cheesemakers. The cheese is made from milk from grass-fed, free-range cows. Beemster Swiss features characteristic eyes (holes) that develop as the cheese ages - while the cheese ripens, bubbles form then burst, leaving the eyes throughout the paste. Beemster Swiss has a nutty, mild flavor with a subtle tanginess and notes of fruit. Semi-firm, buttery, smooth texture with noticeable, distinct eyes (holes) throughout.
