King of the cheeses. The Comte is produced in France. It's a non-mould ripened cheese. The paste is yellow, the texture is buttery and slightly crispy The taste is a mix of roasted coffee flavours and dry fruits.
The comte is a pressed and cooked cheese. It is a protected cheese (DOP). It is made in artisan dairies locally called fruitiere according to very special specifications. The milk collection is daily made from local farms in the Jura mountains. We need 450 litres of milk to make one cheese of 35 KG. The breeds of cows granted to supply the milk are the Montbeliarde and the french Simmental.
