This unusual "cheese" is made directly by the farmer. He receives the blue and white mold cultures from peter from belp. There the cultures are immediately mixed with the fresh milk. blue mold can only develop when it comes into contact with oxygen. That is also the reason why the blue brain stays nice and white inside. Every brain is unique because it contains two different types of mould. These sometimes unite to form a unit, other times they go their separate ways – just as life goes. At the beginning the blue brain touches the tip of the tongue with velvet gloves, only later does it kindle its full bouquet. The dough literally melts on the tongue, its creamy texture nestles lovingly on the palate. This cheese gets that certain «bang» from its roasted aromas. the whole thing is rounded off with a slight acidity, which offers a refreshing experience.
