The wheels are dipped in wax and aged for 30 to 60 days resulting in its namesake's pale-yellow color. This mild, easygoing, semi-soft cheese is the “Swiss Army knife” of cheeses in the kitchen because of its highly versatile and snackable nature- use it as a melter, a slicer, a grater, or a snacker. Kids and adults alike, love it.
