This soft and creamy and always inviting Danish Cheese was invented by Hanne Neilsen in the mid 1800's. She named her wash curds slight sweet cheese - Havarti - after her farm. In Wisconsin, this is used as a rindless melting cheese. It has tiny pin prick holes or "eye". It can be served plain but there are also varieties that contain herbs such as dill or caraway. However you prefer it - it is versatile and is very underrated.
