Haro Cheese Company is a small batch artisanal creamery in Bertram, Texas. Eldo is a raw cow's milk cheese made in a Manchego style. It has a natural rind that has been rubbed in vegetable ash and cave aged 3-6 months onsite. Taking production methods from traditional Spanish made Manchego and using cow's milk results in a creamy versatile cheese. It pairs well with lighter red and crisp white wines, ciders and IPA's. Great on a charcuterie tray with honey, nuts, olives and dried meats. Melts well on a burger or sandwich.
