Imported 6# Swiss loaf distinctively rich and nutty flavor. 100 day aging process insures the cheese is at peak Imported Swiss 7oz. shingle pack. Swiss cheese is a Simi hard yellow cheese with a mildly nutty flavor, and a subtle aroma of hay, and holes of varying sizes. Swiss cheese often appears in cartoons featuring mice but contrary to the animated notion, the holes do not represent a mouse's snake . Theories differ, but one school of though is that bacteria consumes the milk lactic acid and then releases carbon dioxide gas bubbles, that get traped as the paste hardens leaving the holes.
