These celebrated sardines from Galicia are net-caught along the shores of the Rianxo estuaries in northern Spain. They are processed within hours of being harvested. After a rinse in fresh seawater, they are lightly sautéed in extra virgin oil, just enough to hold their shape then they are carefully packed by hand to be preserved in tins. Exceptionally tender and mild in flavor, they are best enjoyed with a crisp white wine or a cold beer and some crusty bread.
