Arborio rice, a short grain rice with a high starch content, is best known for its use in risotto. Roland® Arborio Rice will yield a rich, creamy risotto that can be served as a main course, side dish or appetizer. Store in a cool and dry place. Basic risotto recipe: Sauté 1 chopped onion in olive oil until soft. Add 2 1/2 cups rice and toast a few minutes. Add 3/4 cup white wine and stir constantly over medium heat until it evaporates. Add enough chicken broth to cover rice and continue to stir until liquid is absorbed. Add more broth, as needed, constantly stirring until rice is done, about 20 minutes. Add grated Parmigiano Reggiano or Pecorino Romano cheese and serve immediately.
