Georgia Sourdough Co. uses all organic ingredients to make these delightful and unique crackers. They have natural shelf life due to an enzyme produced in fermentation that is a natural mold inhibitor and preservative. The fermentation process using sourdough starter also breaks down gluten and carbohydrate chains while producing beneficial probiotics that science has recently learned survives the baking process.
