Ventresca is the belly of the tuna, widely considered by tuna lovers to be the most flavorful part, with its delicate texture, rich flavor and high quality. These ventresca filets are packed in extra virgin olive oil to preserve their flavor and texture. For over 150 years, the Yurrita family has operated on the Bay of Biscay, and is the oldest continuously operating conserva company in Basque Country.
