As a dip, spread, or condiment, the Gorgonzola DB Cheese Spread has done all the hard work already. Your love of blue cheese is reason enough to keep this on hand at all times. Gorgonzola is made in a two-day process. Curds from the first day’s milking are swept to the sides of the form, creating a bowl to accept the curds from the second day’s make. Back in the '40s and '50s, it was not uncommon to see our founder, Danny Di Bruno, with a giant spoon in hand behind the counter, scooping out our spreads onto wax paper for customers in our original Italian Market shop.
