Ingredients are: Pasteurized Cow milk, salt, rennet, cultures. Rosie's Robiola takes inspiration from the Piedmontese bloomy rinds. A doughy, brioche-noted rind contains an ever-changing ratio of slow-oozing creamline and chalky, flaking curd. When young it has a bright acidity and curdy freshness. As it matures the silky texture takes on savory notes of buttery, sauteed mushrooms. Rosie's Robiola is vegetarian and gluten free. Bring to room temperature and when young slice and pair with fig jam and mostarda. As it ripens Rosie's develops an oozing cream line that creeps towards a chalky paste taking on a vegetal, funky, and fruity twang. When ripe and buttery mix into pasta sauce or a risotto dish.
