Shropshire Blue is a sight to behold. The wheel is cylindrical, with cut face showing orange curd and evenly spread blue veins and natural orangey/brown rind. This cheese is crumbly when young, creamy and smooth as cheese matures. The orange coloured curd is creamy, buttery, salty with blue keynotes. The texture is crumbly when young, creamy, mellow and smooth as cheese matures, and is aged a minimum 8 weeks. Traditionally served as part of a ploughman's platter with a nice ale and pickles.
