It is not aged for a set amount of time, but rather unit it acquires a particular flavor profile. The unique flavor profile is as if a Gouda and Parmesan had an offspring. Prima Donna Maturo offers a unique Italian Taste sensation within the Gouda Family. White Crystals form in the holes of the cheese during the aging process and oohhh are they delicious! The 3rd of 4 aged varieties, the more aged the cheese, the less the fat content, lending itself to more health-conscious consumers.
