Red Leicester Wheel
The Singleton family first started making cheese on the grassy slopes of rural northern England in 1745. Cheesemaking is currently masterminded by the founders descendants, father-and-son team Tom and Adrian. Their dairy is only a few miles from the tiny farm where the Singletons' story began. Red Leicester is one of Britain's revered Territorial cheeses. In the eighteenth-century an orange tint (derived from a natural dye - annatto - taken from the achiote tree) was added to cheese made in winter in order to mimic the yellower cheese that comes from the milk of pasture-fed cows in summer. Over time, the amount of dye added to the cheese was increased, and yellow became orange which became red. And thus Red Leicester was born. Russet red in colour, our handmade Red Leicester has a savoury flavour with a hint of nuttiness.
