Indigo The Bunting Wheel
The Indigo Bunting is a rare, ultra creamy Blue cheese only available based on the natural rhythms of Wisconsin's sheep milk season. The milk is soft, silken, and bursting with rich flavor. On its own, the sheep's milk is extremely creamy. But in order to create this extra special Blue, we added a ridiculous amount of cow's milk cream to create The Indigo Bunting's extraordinary velvety texture. This extreme decadence combined with a distinctive, yet delicate blue strain is a beauty to behold. Like its namesake, The Indigo Bunting only shows this beauty to the cheese world in the summer months, with occasional rare sightings in October and November. But as the cold north winds begin to blow, it vanishes in the night until next spring.
