Sliced Duck Prosciutto is marinated in star anise, nutmeg, garlic, and black pepper, this is a delicate and rich meat that pairs well with contrasting mouth feels of goats and cow's milk cheeses, especially fresh farmstead and soft ripened cheeses.
This duck blows people away at tastings. It is decadent and rich. The meat is air dried for three weeks and turns a dark deep purple color and the fat is white. It has a great complex finish. Hints of juniper and brown sugar and black pepper on the palate.
