Back in the old days, after the strenuous ascent to the alps, “ mutschlis ” were produced first. Since the cows were very exhausted after the ascent, the milk was correspondingly lean after this feat. The appenberger "mutschlis" are of course made with the best milk and refined with a dash of cream - they are also made all year round. This cheese is more like a "müntschi" than a "mutschli". The creamy consistency of this cheese literally melts on the tongue. it convinces with a slightly sour note.
