The cubes of truffle are inserted directly into the mixture and even after cooking, at high temperature in traditional ovens, they preserve their characteristic aromatic note that is intensely released when sliced. Use a slicing machine to best cut the product. After slicing, clean the slicer thoroughly to remove any truffle residue that may transfer to other products. Mortadella slices should be one twenty-fifth of an inch (about 1 mm).
