Ovolini mozzarella is just one size down from your standard large ball, perfect for when you're making a caprese for just one or two people. The name stems from the Italian word of egg, which makes sense, as they're about the size of extra-large eggs. Because it is naturally high in water content, this cheese is relatively low in fat. Made with rBST free milk sourced from sustainable family farms and produced with renewable energy. Rio Briati is the name on some of the best fresh mozzarella available. Using milk from Wisconsin, "America's Dairy land", Rio Briati relies on fresh, local, rBST-free milk gathered a few hours after milking. The cheese is pulled and stretched to a smooth, porcelain white finish with delicate, milky flavor. "Ovolini" means "egg-sized" and these balls of mozzarella are packed in water to retain freshness. Rio Briati mozzarella is made with vegetarian rennet and is always gluten-free.
