Raschera is a rustic natural rind raw cow’s milk cheese that has been made for centuries in the region and is named for one of its lakes. It is made from milk from two milkings, morning and evening. The quality of the milk comes through in the rich, semi-soft paste, aged a minimum of 2 months. Very little of this cheese makes its way out of Italy so this is a real treat for any cheese connoisseur. The rich milk creates a fine and delicate flavor that is slightly spicy and salty with notes of fresh grass. It comes in a large rounded square wheel with a stony grey rind. The paste is ivory in color, with a pliant semi-soft texture that is consistent and elastic with small irregular holes dotted throughout the cheese.
