Mussels in Escabeche Sauce
Sourced from the rocky shores of Galicia, these mussels are grown on ropes and harvested in the traditional method, by fishermen on specialized boats (bateeiros). The mussels are then carefully steamed and shelled by hand, ensuring only the plumpest, most perfect mussels are packed for this Spanish treat. Once the mussels are cooked, they are marinated in escabeche-a classic Spanish sauce made with olive oil, vinegar, paprika, bay leaves, salt, pepper, and cloves-infusing them with a rich, tangy flavor.
