This is a soft-ripened cow and sheep's milk cheese made in the traditional, Italian robiola style. We have added black truffles for ever more delicious luxury in every bite.
Caseificio dell' Alta Langa is known as the preeminent maker of robiola style cheeses in Northern Italy. All of our cheeses are made by hand, blending traditional techniques with modern recipes. Truffolina is a perfect example of this style of cheese-making. For the first time, we are making a small-format 8 oz cow & sheep's milk robiola with the additional of black truffles, the prized ingredient that the Piedmont region of Italy, where all of our cheese is made, is best known for.
