These wedges of Kosher Parmigiano Reggiano DOP are made by Bertinelli, a family-owned dairy based in the province of Parma. They control the whole chain of production, from growing the grass and milking the cows to aging and packaging the cheese, thus making them uniquely suited to making kosher cheese. Their cheese is aged 18 months and is certified Kosher by OK Kosher Certification. Bertinelli was the first dairy to make certified Kosher Parmigiano Reggiano and they have perfected the process. These are fixed weight 200g wedges with the Kosher symbol prominently displayed. The paste is cream-colored and crumbly, with some tyrosine crystallization. The cheese has dynamic flavor and balance of acidity and sweetness with notes of grass, flowers, and fruit.
