Then we add sweet pear tomatoes picked at the peak of ripeness and slowly simmer for hours, concentrating their flavors and eliminating any acidity. It's ready when it's sweet and savory, perfect for adding deep flavor to paella, patatas bravas sauce, stews and countless other Spanish dishes. Or spread it on fresh toasted bread and top with jamón for an easy pan con tomate.
