Toma Della Rocca mixed milk cheese made by Caseificio dell'Alta Langa, a fifth generation family-owned creamery in northern Italy which specializes in unique, handmade cheeses of this style. Their most famous cheese is called La Tur and Toma della Rocca is like a large format, cut and wrap La Tur. This cheese is made of cow, sheep and goat's milk and offers all the fluffy richness of La Tur in a bigger package! Because of its format, Toma Della Rocca has a tangier, fresher character than La Tur, which tends to be more oozy and unctuous. Toma Della Rocca looks like a beautiful cake and it makes an incredible centerpiece for a grazing board or a perfect serving in a cut and wrap scenario.
