Spotted Trotter Black Pepper Truffle Pancetta is a whole muscle cured pork belly – a classic Italian whole muscle fat. Marinated in organic garlic, sea salt and truffle then dusted with toasted black pepper, the pancetta then cures and dries for 4 to 6 weeks in a curing cave. For best results slice thin or cut into lardons (matchsticks) for cooking, try adding this to your favorite macaroni & cheese recipe for an unmatched depth of flavor! Pairs with Camembert style cheeses and creamy blue cheeses very well. Accompany this pancetta with deep red Zinfandels and medium bodied red wines.
