Mizithra is a traditional unpasteurized Greek cheese made from the whey of sheep's, goats or cow's milk cheeses. It has a lovely aroma and mild, salty flavor, similar to an Italian Ricotta cheese, but a lot dryer. This Greek cheese has a very dry and crumbly texture; it is very easy to cut and grate, you can almost grate it with a knife or fork. Mizithra is perfect for grating over dishes like pasta.
