In their endeavours to provide cheese lovers with a distinguished product, which does credit to their table, the monks spend at least 3 months with the utmost care to achieve a slow ripening. With its firm cheese paste, surfacemould covered rind and fruity taste, Pur Brebis appeals to all of the senses. This cheese was already being made in the 17th century by shepherds in the French Basque country, who passed on their knowledge and skills to the Benedictine monks. Today, sheep's milk from surrounding farms is used to make the cheese and processed directly at the monastery. The Brebis is stored in the monastery's cool cellar for six months until it has developed its own specific character.
