Since the introduction of Arturo Chiriboga’s Bayerischer Blauschimmelkäse – better known as Chiriboga Blue to the US market, it has been a top seller. Its light veining adds a bit of tangy punch to the flavor, but overwhelming flavors of cream and butter linger on the palate. Its smooth, creamy texture and tangy fresh notes sure make it an approachable and popular cheese that’s bound to find its place on any cheese platter. In order to increase his production and aging capacity while still conducting it all at an artisanal level, Arturo has teamed up with colleague and friend Albert Kraus to relocate the production of Chiriboga Blue to Albert’s brand new dairy at the beginning of 2019. While Arturo still closely supervises the production of every batch, modern cheesemaking and aging facilities guarantee the extraordinary quality of every single wheel of Chiriboga Blue produced at Hofkäserei Kraus.
